In order to raise awareness for their charities, the BBC created a #bananabreadchallenge to raise funds and awareness. As I was nominated, I decided to give it a try and adapted their recipe with additional banana, chocolate chips and whisking egg whites for a lighter banana bread.
Please note that the recipe quantities are for a mould of 10.5 cms x 16 cms. If you have a bigger one, you might want to increase the quantities.
- 3 ripe bananas
- 1 egg
- 50g of light brown sugar
- 30g of butter, melted
- 90g of flour, sifted
- 1 1/4 tsp of baking powder
- 1/4 tsp of vanilla essence
- 25g of milk chocolate chips
- a pinch of salt
Step 1
Preheat the oven at 170C. Mash two bananas and keep one to decorate later.
Step 2
Whisk egg white into snow peaks and set aside. In a separate bowl, combine butter, egg yolk until lighter in colour.
Step 3
Add mashed banana, flour, baking powder, vanilla essence and salt to the egg yolk mix. When well blended, gently add in the chocolate chips and even more gently, blend in the egg white.
Step 4
Pour mixture into your mould, place remaining banana on top (sliced in half, cut side up) and sprinkle with brown or light brown sugar. Put in oven for 45-50 min and let it cool 15 min on a rack before enjoying it.
