If you want to add a nice colour to your dips, you can add beetroot to your regular hummus recipe. The consistency will be smother but it will be just as tasty!
- 2 beetroots
- 1 can of chickpeas
- 2 tsp of tahini
- 2 lemon, juice and zest
- 1 tbsp of olive oil
- Salt and pepper at your taste
In a blender add chickpeas, beetroot, tahini, lemon juice and half of the lemon zest. Blend until desired consistency is reached.
Serve in a bowl, with the rest of the lemon zest and a drizzle of olive oil.
For a healthy version, instead of service with tortilla chips, arrange the hummus with carrot sticks, celery sticks, cucumber sticks, crackers and some radish.
