Ginger Cantucci

A tinzy twist to your casual cantucci with some ginger!

Ingredients to make around 30-40 biscuits

      

      

      

  • 220g of white flour
  • 1 tsp of baking soda
  • 1 tsp of ground ginger
  • a pinch of salt
  • 100g of sugar
  • 30g of melted butter
  • 1 egg
  • 1 tbsp of molasse
  • 1 tsp of vanilla extract
  • 75g of almonds

Step 1

Mix all dry ingredients : flour, baking soda, cinnamon and salt.

Step 2

In a separate bowl, beat the sugar, egg, molasse and vanilla extract. Slowly add the dry mixture until the dough is formed.

Step 3

Blend in 75g of almonds and form two little logs. Sprinkle logs with sugar.

Step 4

Place logs in a preheated oven for 20-25 min. Let them cool enough to handle. Slice 1-1.5 cm thick slides and cook 5 more minutes. Flip the slices over and cook 5 more minutes.  Enjoy!

Swap the grounded ginger for grounded gingerspice for a christmassy twist.
