Did you know that the psychological effect of the color orange is optimistic and uplifting. In fact, this energetic color calls to mind feelings of enthusiasm and warmth and we should all find ways to use it in our everyday life. Like making this soup for example!
- 3 tbs of olive oil
- 1 large onion
- 1 tbs of grounded turmeric
- 4cm piece fresh ginger, finely chopped
- ¼ tsp chili flakes
- 1 kilo of pumpkin, peeled & roughly chopped
- 5 large carrots, peeled & roughly chopped
- 1 litre of vegetable stock
- 1 litre of boiling water
- Salt and pepper at your taste
Preheat the oven at 200°C.
In a large bowl, mix 2 tbs of olive oil with the chopped pumpkin and carrots until they are all covered. Place in a an oven tray and let it roast for 30 min.
In a large deep pot over low heat, add the last tbs of oil. When warm, add the onion, turmeric, ginger, garlic and chili flakes. Set aside until the pumpkin and carrots are cooked.
When cooked, add the vegetables to the pot as well as the stock and the boiling water.
Either blend with a hand held mixer or transfer to a blender and blend until smooth.
You can serve with black sesame seeds or grains (pumpkin seeds).
