Simple and healthy, fresh and yet always available, here is a twist to the traditional toasts served during a finger food dinner. Coriander and radish are a great pair as they are both bright, crispy and fresh.
Depending of the size of the toasts adapt accordingly. For appetizers, I calculate, 3 small squares of 3cm x 3cm for each.
- Cottage cheese or cream cheese
- Radishes ( round or french type
- Coriander leaves
- Pumpernickel bread
- Salt and pepper to taste
Step 1
Spread the cottage cheese on the toast and add a dash of salt and grounded black pepper.
Step 2
Thinly slice radishes and dispose as desired on toast.
Step 3
Chop coriander and top it on toast. For a stronger taste, you could infuse olive oil with coriander. In a small bowl, mix the chopped coriander and olive oil and let it stand for a while, then drizzle on toast.
