Roasted Parmesan Asparagus

The asparagus season is on and there are so many ways to prepare these little beauties. Here is one of the simplest and fuss-free ways to prepare thin asparagus.

Ingredients for two as side dish

      

      

      

  • 200 g of thin asparagus
  • 1 tbsp of olive oil
  • 2 tbsp of freshly grated parmesan
  • Salt and pepper to taste

Step 1

Wash your aparagus and cut off the bottom end as it can be tough and stringy.

Step 2

Cover with olive oil and sprinkle with salt.

Step 3

Put to roast in a preheated oven at 180°C for 18 minutes.

Step 4

When cooked (slightly browned), place your asparagus on a platter and grate parmesan on top just before serving.

If you want to add pepper, sprinkle it above the grated parmesan for extra flavour.
