Simple Tiramisu

Tiramisu can seem a bit daunting to prepare but it has two main advantages: it is easy and fast to prepare and also… it can be prepared in advance. Actually, it should even be prepared the night before. So if you are having guests over, it is an excellent idea to prepare son tiramisu in advance.

Ingredients for 4 glasses or a small dish

      

      

      

  • 2 eggs
  • 250g of mascarpone
  • 2 tbsp of sugar
  • 150g of lady fingers or savoiardi
  • 2 espressos, cooled
  • cacao powder or grated dark chocolat

Step 1

Beat 1 tbsp of sugar with 2 eggs yolks until the mixture is clear and creamy. Gently incorporate the mascarpone.

Step 2

Whisk egg whites into snow peaks, gently add little by little the second tbsp of sugar until firm. Gently incorporate the egg whites into the mascarpone mix.

Step 3

Start assembling the tiramisu by covering the base with the cream. Then, add a layer of lady fingers dipped in the cooled coffee, then a layer of cream, lady fingers, etc. End with a layer of cream (even if you have some biscuits left)

Step 4

Spinkle with cocoa powder or grated dark chocolate and set in fridge for 2 hours or overnight (even better).

When serving the tiramisu, refreshen it by sprinkling again some cocoa powder. For a more gourmet version, add cocoa powder between layers too.
