Who said healthy could not be beautiful? Well, that person was certainly wrong because look at the beautiful roses you can make with salmon filet?

Ingredients for two or 4 as a light starter

  • A salmon filet, quite thin
  • 200g of green peas ( fresh or frozen)
  • 20 g of mint leaves
  • 1 tbsp of 0live oil
  • a pinch of sea salt

Step 1

Chop the mint and let it stand in the oil oil to mend the flavor.

Step 2

Thinly slice side-wise the salmon filet and roll the slices into little rolls. Press on a couple of top edges to create the open petals effet.

Step 3

Steam the roses in a steamer and let them steam for 1 to 2 minutes.

Step 3

Cook the peas separately and mix them with the infused oil.

Step 4

Serve the peas on a platter with roses on top, sprinkle with sea salt.

For a more exotic flavor, add lime zest as a finishing touch.
