Did you know gnocchis were made out of potatoes? Whether you did or not, did you know you can make gnocchis out of sweet potatoes? Whether you did or not, you can try it out now!
- 650 g of sweet potato
- 180 g of flour
Peal and remove the skin from the sweet potatoes. Steam them until they can easily be poked with a fork.
Remove the potatoes from steam and let them dry, mash the potatoes.
Mix the mashed potatoes and the flour until creating a dough, do not knead it too much. Cover with a kitchen towel.
Create little logs and cut into small pieces (1 -2 cms). Place each piece at the top of a fork facing downside and gently press down for them to take the form of the fork. If you have one, use a rigagnocchi. Arrange the gnocchis on a tray dusted with semolina flour.
When they are all done, place these in large pot of salted boiling water. Cook for 2 to 4 minutes, you will know they are cooked when they start to float. Remove with a slotted spoon and toss in your favorite sauce.
