Zucchini rolls or zuchini sushis, calls them as you like. They are round, they are fresh and most of all savory! It’s an alternative to the usual sushis, with less rice and more veggies, or an surprising appetizer that you can prepare in advance.
- 2 zuchinis
- cream cheese
- olive oil
- pine nuts
- Salt and pepper to taste.
Cut the zuchinis lengh wise into thin stripes and spead with olive oil on both sides.
Grill the zucchinis on both sides and let it cool.
Mix the cream cheese, parmesan, salt and pepper.
Spread the mixture on the zuchini slices and roll. Hold with a toothpick.
Roast the pine nuts, in the oven or in a nonstick pan and chop the basil leaves.
Serve with a drizzle of olive oil, pine nuts and basil leaves.
